52 Weeks of Baking Love; Week 7: Strawberry Chocolate Chip Cookies for Valentine’s Day

Happy Valentine’s Day!
This week’s baking post is a little early, which I’m actually pretty proud of myself for, considering the posts for the last two weeks have gone up later than I wanted. Plus, I made the prettiest pink cookies perfect for Valentine’s Day!

I found the recipe for these strawberry chocolate chip cookies on Sally’s Baking Addiction (yes, another Sally recipe!) and they are made using strawberry cake mix.
I was skeptical about using cake mix in a cookie recipe because it seemed like cheating. In fact, when telling a friend of mine what I was going to bake this week, she immediately informed me that they “didn’t count.” But because of how badly last week’s cake came out, going the “easy route” and using cake mix, as opposed to experimenting with red food coloring and strawberry extract (which you can totally do if you don’t want to use cake mix), seemed just awesome. Hooray for the easy route! Less to mess up, right? Right!

And I didn’t mess these cookies up. Not at all. And they are so easy to make!

In addition to a box of strawberry cake mix and chocolate chips, you will need baking powder, eggs, vegetable or canola oil, and vanilla extract. All of the ingredients can be combined by hand and only require 10 minutes of baking time. The end result is a thick cookie, chewy all the way around, soft in the middle, and surprisingly non-cakey, despite consisting mostly of cake mix.
They taste great, too! I was wondering if they would pack that same fake strawberry punch like traditional strawberry cake baked from a mix, but they really don’t. There’s just enough of a strawberry taste that you know it’s strawberry and it’s balanced very well with the hint of chocolate you get from the chips. While they are very sweet, it’s a taste that stays with you and makes you want it again and again.
I would so make these cookies again, maybe using white chocolate chips next time.

Also, they are beautiful. Like soft little pink pillows of goodness. I couldn’t take enough pictures of them.

Cake mix cookies sounds like such a great idea. I have a recipe book that is all cake mix recipes. I just need to try them out. I love simple and easy! These look yummy. Thank you for sharing.

1: to cook (as food) by dry heat especially in an oven
2: to dry or harden by subjecting to heat
Therefore, whether you used cake mix or not, you still baked it. =)
