Betty Crocker Antipasto Pasta Salad

antipasto pasta salad I am a huge, huge fan of Betty Crocker’s Suddenly Salad kits. I don’t cook a lot and the list of items I know how to prepare without any horrific or insanely messy accident is quite short, so when I do plan a meal, I tend to scour the grocery store aisles for boxes that lend a hand to the cooking process. I buy Suddenly Salad frequently and always love how the pasta salads turn out.

I have recently been looking up recipes from Betty Crocker and have found quite a few that I’ve tried. Their recipes are phenomenal and even if you aren’t the swiftest in the kitchen, such as myself, you will be able to pull off an amazing looking meal that tastes great when following their recipes. I recently found one for antipasto pasta salad made with Suddenly Salad.

You will need:

  • 1 box Betty Crocker® Suddenly Salad® Caesar pasta salad mix
  • 1/2 cup Italian dressing
  • 4 cups torn romaine lettuce
  • 1 cup cubed salami
  • 1 cup cherry tomatoes, halved
  • 4 oz mozzarella or provolone cheese, cut into 1/2-inch cubes (1 cup)
  • 1 can (2 1/4 oz) sliced ripe olives, drained

1. Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
2. Drain pasta; rinse with cold water. Shake to drain well.
3. In large bowl, stir together seasoning mix and dressing. Toss with pasta and remaining ingredients. Stir in croutons and Parmesan topping just before serving. Serve immediately, or refrigerate.

And there you have it! A great recipe for pasta salad using my beloved Suddenly Salad which, if you’ve never tried it before, you must because it is great. This dish is sure to be a hit at a barbeque or just for a health and delicious snack to kick off your summer.

    I am always looking for something interesting to cook, and I’m amazed at how good a cold pasta salad really is.
