Healthy Three-Pepper Pasta Topping

bell peppers Bell peppers are great for you, yet not so many people eat them as much as they should. They contain high levels of vitamin C which can act as an anti-inflammatory to decrease symptoms of arthritis. They also contain carotenoid compounds, which may enhance vision and decrease the risk of cataracts.

So here is a recipe for a delicious pasta topping using three peppers to help your health.

You will need:

  • one yellow, red and green bell peppers
  • extra-virgin olive oil
  • whole wheat pasta

Directions:
1. Cut yellow, red and green bell peppers into thin strips.
2. Saute 1 cup of peppers in 2 teaspoons of olive oil.
3. Toss peppers with cooked whole-wheat pasta (2 ounces dry).

Extra-virgin olive oil is rich in polyphenol compounds, which help increase good HDL-cholesterol levels and decrease bad LDL levels.

    This recipe looks yum. Will have to try it. As the colors indicate in your beautiful picture, peppers are full of the good stuff. If you add them to your veggies when juicing, the juice gets a nice extra tang.

    this looks like a good recipe. I do the very same dish however i like to add some heat by adding a couple of chilli pepeprs. if you want to not have too much heat you can always remove the seeds.

    Great recipe! I love bell-peppers – my ever-favorite recipe is filled peppers (stuffed with rice and meat). You wash peppers and get the middle out. Then mix boiled rice with minced boiled meat, fill peppers with this mixture and stew for some 20 minutes… yummy:)

    Not only is this recipe healthy but it is also very delicious and inexpensive. I definitely recommend trying this healthy recipe. Me and all my friends love it!

    I use the orange one usually and i like its taste much and next time i will change to red
